The pan can withstand oven temperatures of up to 250° / 480°F and has equivalent properties to cast iron, but with the advantage of lower weight. As it is thinner, the carbon steel can move during heating and cooling, therefore it is natural and normal for the pans to warp a little. It does not affect the good qualities or cooking ability of the pan. However; to reduce the warping effect, turn heat up slowly and use a hob close to the size of the pan bottom.
Satake Carbon steel pans are pre-seasoned and ready for use after a first wash; boil water in the pan for a few minutes. Clean the pan with a sponge and a small amount of detergent. Rinse and dry well. The pans natural nonstick function gets better and better the more you use the pan.
