Nitriding is a heat-treating process that diffuses nitrogen into the carbon steel surface to create a case-hardened surface and built to last. As the pans are treated, not coated, the cooking surface becomes five times harder than regular carbon steel for extra strength and durability. Its smooth deep drawn and polished surface is the perfect foundation for a naturally non-stick performance. NITRI-BLACK™ Carbon Steel Cookware is ready for use out of the box. Your Voyage Series NITRI-BLACK™ Carbon steel cookware comes with a limited lifetime warranty. The following instructions will help you to maximize the performance and durability of your proprietary cookware.
INITIAL USE
Wash your carbon steel cookware by hand with warm water and a small amount of mild dish soap. Rinse, dry, and your cookware is ready to use.
- Suitable for all stovetops, including gas, electric, vitroceramic glass and
induction. - Carbon steel is the most versatile cookware allowing you to sear, fry, bake and more all in one pan.
- Do not use it in the microwave.
- For gas stoves, make sure flames NEVER extend up to the sides of the cookware.
- Use a burner that is SMALLER than or the same size as the bottom of your skillet and wok.
- Gradually heat your pan slowly by starting the burner on a low setting before turning up the heat.
- Metal tools should be used carefully to avoid sharp edges scratching or stripping the seasoning. We recommend silicone or nylon tools to keep the interior finish free from marks and scratches and avoid removing the non-stick patina.
- Cooking acidic foods, including tomato, vinegar, or wine can remove the seasoning and react with the carbon steel, imparting a metallic flavour to food.
- Do not cook spinach, as it reacts with the metal and will turn black.
- To prevent food from sticking, add a small amount of oil or butter to cookware over a LOW to MEDIUM heat setting.
- Always use pot holders or oven mitts to handle hot cookware.
- Your cookware is oven, grill and broiler safe up to 660°F / 350°C.
CAUTION
- Your cookware, handles and lid will be HOT during and after use. Always use heat protection such as oven gloves when lifting or moving your cookware.
- Do not let your cookware boil dry or allow dry cookware to remain on a hot cooktop.
- Never leave your cookware unattended while in use. This is not covered under our limited lifetime warranty.
- Always carefully lift and never slide your cookware when manoeuvring over stovetops or kitchen surfaces. This prevents scratches to the bottom of your pans and to the top of your stove. Damage to pans or stovetops caused by incorrect movement is not covered in our warranty.
- Sudden and dramatic temperature changes can warp the bottom of your cookware.
- Avoid dishes heavy in ingredients like tomato or vinegar and never deglaze with wine as acidic foods can remove the seasoning.
- Acidic foods will also react with the iron content of your cookware and impart a metallic flavour to food.
- Always allow your cookware to cool before washing.
Hand washing is highly recommended to protect the seasoned surface.
- Avoid soaking in soapy water as it might strip off the seasoning surface.
- Remove stuck-on foods with non-metal scouring pad, scrub brush or plastic scraper.
Completely dry your cookware immediately after washing.
Wipe the cookware with a thin layer of oil when dry, and make sure it is evenly distributed.
Never leave food in cookware for a long period of time or store food in cookware. Salty or highly acidic foods like sauces, soups and stews may cause staining or pitting.
- Avoid soaking in soapy water as it might strip off the seasoning surface.
- To re-season your cookware follow these instructions.
